Two franchise locations in the same city serve the same chicken rice bowl. One plates 180 grams of rice and 120 grams of chicken. The other, on a busy Friday, scoops what looks right and sends out 230 grams of rice and 90 grams of chicken. Guests at the second site feel short-changed on protein, the owner sees food cost drift, and head office sees two different products under one brand.
This is an illustrative scenario, not a documented incident. It is the kind of gap that recipe consistency training is meant to close. This guide is for hospitality training directors and restaurant or hotel operations leads. It covers how to diagnose where variation comes from, how to design practice that builds the skill of following an approved recipe and spotting portion variation, how to run and score a case, and what training cannot fix. Have an operations lead who knows your menu validate the case and the criteria before you use them.

| Spørsmål | Kort svar |
|---|---|
| Hva er oppgaven? | Prepare a dish to the approved recipe and notice when a portion is off. |
| What is a standardised recipe? | A recipe tried, adapted and retried until it gives the same results and yield each time when the same procedure, equipment and ingredients are used. |
| Hva scorer du? | Recipe adherence and portion variation, not speed alone. |
| Is a recipe quiz enough? | No. It confirms people know the steps, not that they can portion correctly on a busy line. |
| Hvem bekrefter saken? | Driftsleder for restaurant eller hotell. |
| Hva kan trening ikke fikse? | Missing tools, unclear specifications and understaffed shifts. |
| Hvordan vet du at det fungerte? | A new, unseen case scored against agreed criteria, then spot checks on the line. |
1. Beskriv ytelsesproblemet
Start with the job, not the course. What must a cook or line lead do? Prepare each dish to the approved recipe, portion it to the specified weight or measure, and detect when a portion or a preparation step has drifted, then correct it or escalate. That is a skill with decisions in it: is this scoop level, does this plate look right against the reference, should I remake it?
Be careful with the word "consistency". Guests judge a dish by taste, appearance and quantity. Operators judge it by food cost and waste. Both depend on the same underlying behaviours, so name the measurable ones: ingredient weights, portion sizes, preparation order, cook times.
2. Diagnostiser lærings- og konteksthullene
Before you build training, check why locations differ. Variation has several causes, and only some of them are training problems.
Check the recipe first. The US Department of Agriculture defines a standardised recipe as one that has been tried, adapted and retried at least three times and found to produce the same good results and yield every time when the exact procedures are used with the same type of equipment and the same quantity and quality of ingredients. That definition comes from the Institute of Child Nutrition's recipe standardization guide, written for school kitchens with USDA support. The idea carries over to franchise kitchens. If your recipe card has not been tested by more than one cook on more than one line, you may be training people to follow a recipe that does not reliably produce the specified result.
Check the tools. If the specification says 120 grams but there is no scale at the station, no amount of training will produce 120 grams. The same guide notes that weight is measured with a scale and that scoops (dishers) come in numbered sizes and ladles in ounce sizes. In its tables, a number 8 scoop holds half a cup level, and a 4 ounce ladle holds about half a cup. Staff who cannot tell the right tool from the wrong one will vary, however motivated they are.
Sjekk den kognitive etterspørselen. Match the activity to the task. Recalling the ingredient list is a low-level demand. Applying the recipe to a new batch size, or judging whether a plated portion is within tolerance, is higher. A course built only on recall quizzes will test the wrong thing. The revised Bloom's taxonomy is a handy way to see this: your task sits at Apply, with Analyse or Evaluate when someone must judge whether a portion is acceptable.
Check staffing and time. A new hire on a short-staffed lunch rush will rush portions. That is a rostering problem to raise with the franchise owner, not a gap to fix with another module.
3. Utform målrettet forberedelse og øvelse
Break the training into three stages, each matched to what it needs to achieve.
Forberedelse: bekreft det grunnleggende. Use a brief self-paced diagnostic on the prerequisites: reading a recipe card, converting units, knowing which scoop or ladle goes with which portion. A recall check like this confirms prerequisites only. It does not show that anyone can portion correctly under pressure, so do not report it as a competence score.
Øvelse: avgjørelser med tilbakemeldinger. Use cases that require a reasoned response. Show two plated photos or two sets of recorded weights from different shifts and ask: which one is within tolerance, what would you do, and what would you check next? Feedback should name the recipe adherence point and the portion variation point separately, so a learner can tell "I followed the steps but over-portioned" from "I skipped a step".
Menu engineering and waste audits belong here as source material. Real trim, plate waste and over-portion figures from your own locations make cases credible, and they show learners why a 30 gram overage matters across thousands of covers. Use your own numbers, anonymised, and check them with finance before you share them.
Gjennomgang og overføring: Lev der vurdering er nødvendig. Live coaching adds the most value on ambiguous calls, such as a plate that is slightly under but looks generous, or a prep batch where the product has a different yield. Asynchronous review is enough for straightforward adherence checks, for example photo submissions against a reference. Interactive polls, quizzes and short scenario slides can run in a team huddle or be taken self-paced, so every location, including those on different shifts, gets the same practice.
4. Arbeid deg gjennom et realistisk eksempel
Here is a short task you can adapt. It is illustrative and needs an operations lead to validate the numbers and the answer key.
Saken. The approved recipe for the chicken rice bowl specifies 180 g cooked rice and 120 g cooked chicken, with the rice portioned by a level scoop and the chicken pre-portioned at 120 g. A weekly audit of two locations shows Location A averaging 182 g rice and 118 g chicken, and Location B averaging 228 g rice and 92 g chicken, with a wide spread on Friday evenings.
Lærerens oppgave. Review the audit data and two plated photos. Say what is happening, which evidence supports your view, what you would do on the line, and what extra information or support you would need.
Lærernes valg og tilbakemeldinger.
- "Location B needs a refresher on the recipe." Defensible but incomplete. The data shows rice up and chicken down, which looks like a portioning habit, not a missed step. Feedback: check whether the chicken is pre-portioned and whether the rice scoop is level.
- "Location B is over-serving rice to look generous." Partly right. The learner has named a cause without checking the tool. Feedback: ask what scoop B uses and whether a scale is at the station.
- "Check tools and the Friday staffing first, then retrain on levelling the scoop and weighing chicken." Strong. It separates context from skill and plans a measurable next step.
Det nye forsøket. Give a new audit with the same pattern in a different dish, such as a pasta portion, and see whether the learner transfers the reasoning rather than repeating the earlier answer.
5. Vurder kapasitet og planoverføring
Score a new, unseen case. Use a short rubric with 0 to 2 for each criterion, defined with your operations lead.
| Criterion | Observerbare bevis |
|---|---|
| Oppgaveutførelse | Identifies the deviation from the approved recipe and the portion variation, and records the action and the evidence. |
| Argumentasjon | Explains constraints, alternatives and uncertainty, and checks both recipe adherence and portion variation. |
| Grenser | Bruker godkjente prosedyrer og eskalerer når informasjon eller fullmakt mangler. |
Anchors: 0 means absent or unsupported, 1 means partial with relevant omissions, 2 means complete and justified against agreed criteria. Define critical errors separately, for example serving a product that fails an allergen or safety rule. An overall score must not hide a critical failure. This rubric is a proposed starting point, not a validated readiness standard, so adapt it with your sector specialist.
Oppfølging på arbeidsplassen. Check transfer after people have had time on the line. Compare baseline and follow-up audits of recipe adherence and portion variation, using the same denominator each time, for example plates sampled per location per week. Look at concurrent changes before crediting training: a new scale, a menu change or a staffing change can all move the numbers.
Hva trening ikke vil fikse
- Missing tools. No scale or correct scoop, no consistent portion.
- Uklare spesifikasjoner. If the card says "a generous scoop", the variation is in the card.
- Bemanning og tempo. Rushed shifts produce drift whatever people know.
- Variasjon i tilbudet. A different case size or trim yield changes the plate.
- Bevisgrenser. One audit shows that something differs; it does not prove why.
Name these to the franchise owners early and agree who fixes each one. Training improves what staff can do and notice. It cannot supply equipment or time.
Ofte stilte spørsmål
What is recipe consistency training?
Training that builds the skill of preparing a dish to its approved recipe and portioning it to specification, and of noticing when it drifts. It is task practice with feedback, not a recipe memory test.
How do you measure portion consistency?
Weigh or measure a sample of portions at each location and compare them with the specification, then track the spread over time. Using the same sample method before and after training keeps the comparison fair.
What is a standardised recipe?
One that has been tried, adapted and retried until it gives the same result and yield each time with the same procedure, equipment and ingredients. The USDA-linked guidance sets this at three tests or more.
Do all locations need the same tools?
Yes, where the specification depends on them. A recipe that calls for a specific scoop or a 120 gram portion needs that scoop and a scale at every station.
Hvor skal jeg starte
Pick one high-volume dish and audit portion weights at two locations for one week. Check the recipe card and the station tools first. Then write a case from the real pattern, have an operations lead validate the answer criteria, and pilot it with one team before you roll it out.
